Ingredients:

Recipe:
- In a large bowl, mix together the yogurt, onion, garlic, ginger, green chilies, red chili powder, turmeric powder, coriander powder, fennel powder, and salt to make a marinade for the lamb. Add the lamb cubes and mix well to coat the lamb evenly—Marinate for at least 2 hours, or overnight in the refrigerator for best results.
- Heat the ghee or oil in a large pot or Dutch oven over medium heat. Add the cumin seeds, cinnamon sticks, green cardamoms, cloves, and bay leaves, and fry for a few seconds until fragrant.
- Add the marinated lamb to the pot and stir well to combine with the spices. Cook, occasionally stirring until the lamb is browned on all sides, about 5-7 minutes.
- Add 1 cup of water to the pot and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for about 45 minutes or until the lamb is tender. Keep stirring occasionally.
- Remove the lid and continue to simmer for another 10-15 minutes, or until the gravy thickens to your desired consistency.
- Garnish with chopped cilantro and serve hot with rice or naan.
Note:
- you can also add some cashew paste, tomato puree, and saffron to make it more rich and more delicious.
- Instead of lamb, you can also use beef, chicken, or mutton
- If the gravy is too thin, you can add some cornflour to thicken it.
