  • 1 cup plain yogurt

  • 2-3 green chilies, chopped
  • 2 tbsp ghee or oil
  • 1 tsp cumin seeds

  • 4-5 green cardamoms
  • 4-5 cloves
  • 2 bay leaves
  • 1 tsp red chili powder
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp fennel powder
  • Salt, to taste
  • 1/4 cup chopped fresh cilantro, for garnish

Recipe:

  1. In a large bowl, mix together the yogurt, onion, garlic, ginger, green chilies, red chili powder, turmeric powder, coriander powder, fennel powder, and salt to make a marinade for the lamb. Add the lamb cubes and mix well to coat the lamb evenly—Marinate for at least 2 hours, or overnight in the refrigerator for best results.
  2. Heat the ghee or oil in a large pot or Dutch oven over medium heat. Add the cumin seeds, cinnamon sticks, green cardamoms, cloves, and bay leaves, and fry for a few seconds until fragrant.
  3. Add the marinated lamb to the pot and stir well to combine with the spices. Cook, occasionally stirring until the lamb is browned on all sides, about 5-7 minutes.
  4. Add 1 cup of water to the pot and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for about 45 minutes or until the lamb is tender. Keep stirring occasionally.
  5. Remove the lid and continue to simmer for another 10-15 minutes, or until the gravy thickens to your desired consistency.
  6. Garnish with chopped cilantro and serve hot with rice or naan.

Note:

  • you can also add some cashew paste, tomato puree, and saffron to make it more rich and more delicious.
  • Instead of lamb, you can also use beef, chicken, or mutton
  • If the gravy is too thin, you can add some cornflour to thicken it.
